Football Scotcheroos
This weekend my husband and I were talking about all of the fun things coming up in the next few months. Corn mazes, Halloween, Family Vacations, Pumpkin Carving, etc. etc. After a few minutes I asked him what he was MOST looking forward to this Fall. And without a single hesitation he exclaimed: Football! Sooo I decided we needed at least a few activities to celebrate the start of Football season for any other parents or kids who are looking for a festive way to celebrate.
Scotcheroos (or PB Rice Krispies) have been one of my favorite desserts for as long as I can remember! So adding a simple football twist to them just felt right!
Now, you don’t need any special recipe to accomplish this fun dessert. It’s as simple as it seems. Just make your favorite rice krispie or scotcheroo recipe. Cut each piece into rectangles, and then use white frosting to pipe the football lines on the top. Although if you’re looking for a yummy and basic recipe to follow, read on!
Here’s what you’ll need for this tasty treat:
Ingredients:
1 c. corn syrup
1 c. sugar
1 c. peanut butter
5-6 c. rice krispies
11.5 oz milk chocolate chips (1 small bag)
11.5 oz butterscotch chips (1 small bag)
white frosting








Instructions:
Measure rice krispies into a large bowl. Set aside.
Spray a 9x13 pan with non-stick cooking spray. Set aside.
Mix corn syrup and sugar over medium-low heat. Mix continually.
Before it comes to a boil, remove from heat, and add peanut butter. Mix well.
Moving quickly, pour mixture over rice krispies and mix until all of the cereal is coated thoroughly.
Immediately transfer into 9x13 dish and push down until the top is level
Mix the butterscotch and milk chocolate chips on the stove top over low heat. Stirring continually.
Once completely melted, pour over the top. Allow the chocolate to set up before cutting. Don’t let it cool completely or it will be too hard to cut into.
Cut the scotcheroos into rectangles
Use a fine tip on a frosting bag to draw white lines on each piece
I had planned on being done at this point. However, my sweet dad was at my house as I was making these and he had the fun idea to take it a step further and trim the corners of each piece, making the shape more similar to a football. So he took the lead and transformed them for me. I thought they turned out so cute!! And my kids were obsessed. So if you have the time, consider this slight variation!
That’s it! Short and sweet. But so fun! And bonus - sooo delicious!
